Carrot rice Recipe: (Category: Indian Rice Recipes)

Ingredients: Boiled Rice - 2 Cups
Grated caroot - 1/2 cup
Big onion - 1
Tomota -1 (small)
Mint leaves - 10 nos.
Green chillies - 4 nos.
(optional)
Cashewnut 10
Ginger. garlic paste - 1 tbs
Ghee - 1 tbs
Oil - 3 tbs
cloves - 2
cinnamon - 1
cardamon - 1
Garam masala powder - 1/2
tsb
Chill powder - 1 tbs
Coriander powder - 1 tbs
Turmeric powder - 1 tbs
Cumin powder - 1/2 tbs
Curry and coriander leaves
(chopped) - small amount
Salt as per taste
Method: cut the tomato into small pieces.
Finely chop the onion.
Place the saucepan on a medium
heat and allow it to warm through.
Add the ghee,oil.
Add cloves, cinnamon and cardamom.
Add chopped onion, mint leaves and
green chillies and allow onion turn to
be brown.
Then add cashew, and mix.
Add ginger, garlic paste and fry for
1min.
put the tomato and mix
Then add grated carrot , fry
continuosly.
Add salt.
Add turmeric powder, garam masala,
chilli powder, coriander powder,
cumin powder one by one.
Mix contiously till oil comes out.
Mix well it to the boiled rice and add
some ghee
Marinade the rice with curry and
coriander l;eaves.
