Ingredients: Chicken - 1 kg
Basmati rice- 1 kg
Onion - 3
Tomato - 1
Ginger - 2" Piece
Garlic pods - 1 big
Green chilly - 2
Ghee - 1/2 cup
Oil - 3-4 tbsp
Salt - as required
Coriander powder - 1 tsp
Chilly powder - 1 tsp
Garam masala powder - 1 tsp
Turmeric powder - 1 tsp
Cashew nuts - 10 nos
Raisins- 10 nos
Coriander leaves - A bunch
Yoghurt - 4 tsp
Method: Marinate the chicken pieces with
turmeric powder, chilly powder, salt
and garam masala powder. Fry them
in oil or grill in oven. After frying, keep
the chicken pieces aside. In the same
oil, add sliced onions, ginger & garlic
paste, green chillies and fry it till the
onions become soft, then add
coriander powder, chilly powder and
garam masala powder. Mix well for
sometime. Then add the sliced
tomato and after it becomes soft add
yoghurt. Then add the fried chicken
pieces, Mix well for sometime and
switch off the flame.
Heat ghee in another large heavy-
based pan. Fry cashewnuts and
raisins. Put measured amount of rice
and cold water (double the quantity
of rice). Add little turmeric powder
and salt to it. Bring to the boil, stir
and cover. Simmer for 10 mins then
turn off the heat and leave to stand
for 5 mins, still covered.
Layer the rice and cooked chicken.
Garnish with chopped coriander
leaves. Serve hot.
